Oatmeal Cookie Whoopie Pies
A treat for anytime of the day!
About two months ago we went on vacation and while there I bought some Little Debbie Oatmeal Cream Pies, my daughter tried them and has been hooked on them since. So I decided to try and make something like it on my own. I combined my mom's oatmeal cookie recipe - which I make quite frequently, with the filling for whoopie pies. It took a couple tries to get a cream filling I liked - but after a few tries this combination is a keeper.
Step one is to make the oatmeal cookies here is my recipe:
1 c softened butter
1 c white sugar
1 c packed brown sugar
2 eggs
1 tsp vanilla extract
2 c all purpose flour
1 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
3 c quick oats
Preheat your oven to 375 and spray your cookie sheets with non stick butter flavored spray. Then cream you butter, white sugar, and brown sugar. Add your eggs and vanilla extract. Now begin adding your flour one cup at a time as well as baking soda, salt, and cinnamon. Lastly, add your quick oats one cup at a time. Spoon cookies onto your sheet and bake for 11 min. Allow to cool completely on a wire rack.
Step Two is to make the filling:
For your filling:
1 box confectioners sugar
4 T milk
3 T flour
1 cup crisco
2 tsp vanilla extract
2 egg whites
Whip all ingredients together forming a fluffy cream filling. Before adding the cream make sure your cookies are cool or you'll have some melting occur.
Step three is to assemble and eat. Hope you enjoy these oatmeal treats!
